Day 13, Week 2 of “The Final Push: Fit 4 2013” Challenge
These creamy and fruity blintzes are a perfect treat to serve during the holiday season. They will definitely satisfy your sweet tooth and your guests will never guess that they are healthy and nutritious!
Let’s get started with this finger-licking delicious recipe preparation!
- 3 eggs
- ¾ cup milk or milk alternative
- ½ cup all-purpose flour
- ¼ cup kamut flour
- 1 pinch of salt
- 1 cup 0,25% fresh cheese quark
- ½ cup of plain Greek yogurt
- 1 Tbsp. honey
- ½ tsp. cinnamon
- 1 cup strawberries (fresh or frozen)
- 2 Tbsp. honey
Whisk eggs with milk in a large bowl and whisk in flour and salt until smooth
Cover and refrigerate for at least 30 minutes (this will keep blitzes tender once cooked)
Heat a non-stick frying pan over medium & lightly spray with oil
Pour ¼ batter into the pan and cook until down-side is golden then flip over and repeat
Mix quark fresh cheese with Greek yogurt, honey and cinnamon
Combine strawberries and honey in a small saucepan and set over medium-high
Stir occasionally until strawberries are tender but still hold their shape (about 5 min.)
Stir 1 Tbsp. of the strawberry sauce into the cheese filling
Scoop 1/4 of cheese filling onto the end of the crepe, fold crepe gently over filling and fold the sides in, then roll it up
Add 1/4 of the strawberry sauce over each crepe
For 1 serving using 2% milk = 1 (1/4 batter) crepe + ¼ strawberry sauce + ¼ cheese filling.

Protein: 15,6 gr.
Fat: 4,8 gr.
